Cake Recipes

Who doesn't like cake? Sure, there are many, many cake recipes out there, and cake mixes too. However, once you make a cake from scratch, you'll immediately taste the difference between mixes and homemade. And really, there are so few ingredients in most cakes that they are as easy to make as one from a mix. So, make a cake tonight, and enjoy these unusual recipes!

Dirt Cake

First, you need a large pot or planter. Line the planter with foil so cake will not drip through the drain hole in the bottom of the planter.

  • 1 (12 oz.) container whipped topping
  • 1 lg. pkg. Oreo cookies
  • 4 Tbsp. butter
  • 1 (8 oz.) pkg. cream cheese
  • 1 cup powdered sugar
  • 3 1/2 cup milk
  • 2 pkgs. Instant French vanilla pudding

Crush cookies, including the cream filling and set aside.  Cream together butter, cream cheese and powdered sugar.  Mix in milk, pudding, and whipped topping. Place a layer of crumbs over bottom of planter, then add a layer of cream mixture and repeat, making sure your last layer is cookie crumbs. Place in refrigerator overnight. Before serving place silk or artificial flowers in the top of the cake. Now you have a flower arrangement you can eat!

Peanut Butter Cake

  • 1/3 cup shortening
  • 1 cup brown sugar
  • 1/2 cup chunky peanut butter
  • 2 eggs
  • 1/2 cup brown sugar
  • 1 cup milk
  • 1 tsp. vanilla
  • 2 cups. flour
  • 1/2 tsp. salt
  • 2 1/2 tsp. baking powder

Preheat oven to 350 degrees. Prepare pans by coating with a light film of butter or shortening and then dusting with flour.  Cream shortening. Slowly add and beat in 1 cup brown sugar and peanut butter. In another bowl, beat together 2 eggs and 1/2 cup brown sugar. Add this to the first mixture and beat well. Sift together flour, salt and baking powder. Add dry ingredients alternately to first mixture, alternating with milk and vanilla. Pour mixture into pans and bake until firm in center, about 30 minutes.

Hummingbird Cake

  • 3 cups flour
  • 2 cups sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 cups bananas, chopped
  • 1 cup nuts, chopped
  • 1 tsp. cinnamon
  • 1 1/2 cup Crisco oil
  • 3 eggs
  • 1 (8 oz.) can crushed pineapple, including juice

Preheat oven to 350 degrees. Grease and flour 10-inch tube pan or bundt pan. In bowl, sift flour, sugar, soda, salt and cinnamon together. Add remaining ingredients and stir until mixed. Hand mix only. Bake one hour and 10 minutes. This makes a big cake that comes out very moist.
